Welcome to the third edition of Sajf—our annual celebration of summer, set once again in the heart of our rustic olive grove. Continuing our tradition of meaningful collaborations, we're partnering with The Master Cellar, with Stephan Cassar of Cassar Camilleri Ltd. leading a guided tasting of five distinctive sparkling wines, each accompanied by his expert insight. This charming stand-up event features high round tables for guests to wander and enjoy, promising an unforgettable evening of fine fizz, flavourful food, and warm ambiance—with a hint of sparkle in every bite and sip. Menu: Fresh tuna & Manteca colora This dish features cubed tuna belly marinated in olive oil, skewered, and brushed with Manteca colorá—a spiced Andalusian pork lard infused with paprika, oregano, bay leaf, and garlic. Grilled over open flame, the melting lard seeps into the tuna, creating a smoky, richly spiced expression of southern Spanish flavor. Accompanied by Cava Brut, Marques de Caceres, Penedes, Spain Boudin Blanc & Grilled Melon Salad Our Boudin Blanc, made from chicken, milk, breadcrumbs, and delicate spices, is poached for a tender, subtly spiced finish with a gentle snap. A grilled cantaloupe melon salad adds smoky-sweet freshness, perfectly balancing the sausage's richness. Accompanied by Carte D’Or Brut, Drappier, Champagne, France Fried Rabbit with Chips We honour Maltese tradition with slow-braised rabbit in garlic and wine, pulled from the bone, rolled, breaded, and fried into a crisp roulade. Paired with hand-cut chips, it’s a refined take on a rustic classic. Accompanied by Cassar de Malte Brut, Marsovin, Wardija Valley Estate, Malta Beef, Lardo and Sicilian Style Caponata Finely minced, spice-seasoned prime beef is wrapped in lardo for rich flavour and moisture, then cooked to a perfect medium. It’s served with a bold Sicilian caponata of aubergines, tomatoes, raisins, and nuts, plus crusty bread to soak up every vibrant, rustic bite. Accompanied by Lamoremio Brut Rosato, Benanti, Etna, Sicily Yogurt ice-cream , peach and hazelnut We end on a playful note with a frozen yogurt-peach stick, dipped in white chocolate and topped with grilled peach and hazelnuts—a creamy, crunchy, and smoky-sweet finale. Accompanied by Vigna Senza Nome Moscato D’Asti, Braida, Piemonte, Italy Join us for a memorable evening of culinary delight and community spirit. Price includes food, bubbles, and water.
