The original Wellington recipe is made using beef tenderloin, our recipe is a take on the famous dish, shaped likewise, using a mushroom duxelle to encase the loin. The difference is that we have chosen to use locally sourced pork tenderloins and prosciutto to encase the pork. We will be serving the wellington with a wild rucola and citrus salad. By the end of this workshop, you'll feel confident to replicate this recipe and impress your guests. We'll show you just how great our wellington recipe is for hosting friends over as you can prepare it beforehand and pop it into the oven once your guests have arrived.
