These flavors are deeply rooted in tradition, yet we aim to present them in a simple, approachable way, making it easy for everyone to bring a taste of Malta into their kitchens. By embracing the essence of time-honored recipes, we offer a modern take that’s both authentic and easy to recreate. The chef instructor will guide you step by step through the process of creating some of Malta's most beloved dishes. You’ll learn how to make Malta’s version of ratatouille, preparing and filling of marrows, create traditional Maltese-style potatoes. Each dish will bring you closer to the heart of Malta's culinary tradition, with easy-to-follow instructions and tips from our chef instructor. On the menu: Starter: Kapunata - Malta’s version of ratatouille, made with tomatoes, eggplants, onions, olives, and capers, often served at the start of a meal or as a side dish. Main: Qarabaghali Mimli (stuffed round marrows) - The chef will demonstrate how to scoop out the marrows and stuff them with a flavorful pork mince mixture, using the flesh from the scooped marrows to create a delicious filling. The marrows will then be placed in the oven, resting on a bed of tender Maltese-style potatoes, allowing the flavors to infuse and create a beautifully balanced dish. Regardless of what we’re cooking, you don’t have to worry about a thing as we’ll provide all the recipes, tools, and ingredients you need for the session. All we ask is that you turn up on time so we can all get started together! After we’re done? Things don’t end once the cooking session is complete. You can enjoy the fruits of your labor as we gather around the table to share our meal with a few glasses of local wine, or take it home to share with loved ones.
