HomePro is an 8-session course designed for anyone looking to build real, practical confidence in the kitchen. Whether you're new to cooking or want to sharpen your skills, this course will walk you through the core techniques, recipes, and knowledge every home cook should know. Each session focuses on a specific area of home cooking — from eggs and sauces to fish, steak, and desserts — with an emphasis on hands-on learning using quality ingredients and approachable methods. Over the span of 8 weeks, you’ll cook a wide variety of dishes, develop solid culinary habits, and learn to make everyday meals from scratch with ease. What you’ll learn: Session 1 – Breakfast Day Learn to cook a proper breakfast from scratch. You’ll make your own jam, master fried, poached, and scrambled eggs, and bake a traditional soda bread. Session 2 – Baked Pasta Prepare a classic baked cannelloni with a homemade irkotta filling. You’ll make both a béchamel and a tomato sauce from scratch. Session 3 – Fish Day Gain confidence working with fish. You’ll learn how to fillet and pan-fry a whole fish, prepare a simple roast potato side, make fish patties, and finish with a quick pan sauce. Session 4 – Steak Day Learn the fundamentals of cooking steak at home. This session covers steak doneness, fried onions, homemade mayonnaise, and a classic coleslaw. Session 5 – Chicken Part 1 Explore basic chicken butchery techniques and prepare a flavourful tray bake. You’ll also make a classic Caesar salad with dressing from scratch. Session 6 – Chicken Part 2 Focus on braising techniques as you prepare a braised chicken leg dish, along with mashed potatoes and a homemade chicken stock. Session 7 – Rice Day Learn two essential rice-based dishes: a traditional paella and a creamy risotto. This session covers timing, flavour layering, and cooking techniques specific to rice. Session 8 – Sweet Day A hands-on introduction to home baking and desserts. You’ll make panna cotta, chocolate fondant, a sweet pie, and learn how to blind bake a pastry shell.
