Chardonnay
 
After much deliberation, 2,500 Chardonnay vines were planted in 2005—an ambitious choice for a warm climate. With yields limited to 1.6 kg per vine, the results have proven remarkably rewarding.
Oak-fermented and rich in character, this Chardonnay reveals notes of apricot, white fig, and vanilla, balanced by vibrant acidity and an alcohol content often exceeding 14% vol. Amber-hued and full-bodied, it stands proudly alongside our reds.
Best served at 12 °C, it pairs beautifully with cheese, savoury pastries, foie gras, cold cuts, fish, and seafood. Produced in limited quantities of around 4,000 bottles annually, this wine can age gracefully for 5 to 10 years in outstanding vintages.
